Recipe for 4 persons
4 Chicken fillets
300 grams Mango Chutney
1 dl full fat cream
1 dl Orange Juice
2 Tbs butter or oil for frying the fillets
1 Tbs curry powder or red curry paste if desired
Salt & pepper
1. Oven temperature 200 degrees Celsius
2. Season the breasts with salt and ground pepper. Brown the chicken fillets well on each side in a hot frying pan. Put the chicken in a suitable form. 3. Mix well with all the other ingredients, run it with a mixer if you want. Season the sauce with salt and pepper (if necessary) and pour it over the chicken in the form. 4. In the middle of the oven at 200 degrees for about 30 minutes or until the chicken is cooked through. Sprinkle over pomegranate, chopped peanuts, coriander and finely chopped chili. Serve with rice and naan bread.
Mango chutney is available in both mild and strong versions, and with different sugar content. Choose the one you like best yourself. If the chicken fillets are small - you can use a few extra. For the sake of simplicity, you can drop the browning. Season the chicken with salt and pepper, add the chicken to the mold, pour over the sauce and proceed as described.
