Swedish Tosca Cake

It is a buttery sponge cake topped with a thin layer of brittle, caramelized almond, sugar and butter mixture.

If you google Swedish Tosca Cake you will find quite a few recipes with some variation in them.

This is my favorite, I find it quite easy to make and the result have been perfect every time.



Swedish Tosca Cake

200 gr butter 2,5 dl sugar 2 eggs 1 tsp vanilla sugar (powdered) 20 almonds (finely chopped) 3 dl plain flour 1 tsp baking powder 1,5 dl cold milk

Whisk butter and sugar, add one egg at the time. Then add the rest of the ingredients and stir good. Add into a buttered and floured baking tin and bake in a preheated oven at 175 degrees Celsius for approx 30-40 minutes

Topping on the cake

1 dl almonds (finely chopped) 1/2 dl sugar 50 gr butter 1 tbs of plain flour 1 tbs of milk

Bring everything to a boil, spread over the cake, put it back into the oven at 225 degrees Celsius for about 5 minutes, until the top is golden and crunchy.
